Freeze-Dried Wheat Grass Juice
Wheatgrass juice, What is it?:
Wheat Grass Juice is a natural whole food made from the
dried juice of young wheat plants. It has the same balance
of minerals, vitamins, enzymes and phytochemicals found in
the young, fast growing plants. Because our drying process
is so gentle, these plant cell chemicals are kept in their
natural state - they are almost as active after mixing with
water as they were in the fresh juice.
Wheat Grass juice has been used as a tonic and natural
energy source for many years by people all over the world.
Studies of its efficacy have noted its positive effects when
used in anti-aging therapies and in other treatments for
diseases associated with the slowing or stopping of cell

How is it made:
We use a very minimal process to extract the juice and
quickly freeze it to preserve as much of the activity of the
vitamins and enzymes as possible. Freeze-drying is used to
dry the juice while it is still frozen. The low temperatures
and the use of an oxygen-free drying environment allows
enzymes, vitamins, and other phytochemicals to be dried
without suffering the damage that results from other kinds
of drying processes.
We harvest only juvenile plants in their fastest growing
stage. This assures that the phytochemicals and enzymes that
control cell growth and repair, along with the hormones and
other growth factors that turn these processes on and off,
are at their most active. Because our plants are
field-grown, they have developed the systems needed to
repair themselves when stressed by damaging factors like
exposure to high levels of UV light or other oxidants.
Unlike products made from grass grown in trays under mild
conditions and which are harvested in a younger juvenile
stage, we allow our plants to suffer natural field stresses
long enough to fully activate the cell repair processes in
the plant.

Why is ours better:
A gentle drying process:
Freeze-drying is a much better way to preserve enzyme and
vitamin activity than the typical process used to make other
Wheat Grass juice products. Most whj powders are dryed using
high temperatures and in the presence of oxygen - freeze
drying is done at below zero temperatures in an oxygen free
environment. Without heat and oxygen to damage them, enzymes
and vitamins are much more likely to be active even after
they are dried. When a lab doing research on enzymes wants
to preserve a sample for later study, the drying process of
choice is always freeze-drying, simply because of its
ability to maintain the live nature of the enzymes they are
studying.

Rice is not just a filler:
DN doesn't offer a pure Wheat Grass juice product for a good
reason - enzyme and phytochemical activity quickly degrades
when the pure dry crystals are exposed to the oxygen and
moisture in the air. One way to protect enzymes and other
molecules from this kind of damage is to add a soluble
carbohydrate (we use over-cooked rice) to coat the juice
particles as they dry. This forms a hard starchy matrix
around and between the enzymes and other active molecules
that protects them from being damaged. When added to water,
the crystal's matrix dissolves and allows the natural
activity in the juice to reawaken. DN's product is more

Young plants are important, but they can't be too young:
Tray grown young plants have more of the good stuff than
sprouts because they're older, but they're still too young
and unstressed to have completely developed their cell
defense systems. And a diversity of systems is what DN wants

that our plants are being harvested at the right stage?
Taste is one way - plants that are too young are very sweet.
Those sugars in the plant are a sign that the cells are
still building their infrastructure - they're still getting

molecules and factors that turn those systems on, are doing
their work.
